Breakfast Coffee Cake
This is one of my all-time favorite breakfasts! I had it for my birthday breakfast for years. My kids also have loved this one! It is good hot, right out of the oven, and it is good cold later on. It is moist, but not too sweet. I like to pair it with bacon or sausage and some fresh fruit. I am not a coffee drinker, but that is the traditional way to eat it. I eat it with milk or orange juice 😊It is also so simple to make!
Preparation:
1. Preheat the oven to 350°F.
2. Cream Butter and Sugar. I use my hand mixer.
3. Add Eggs, Sour Cream, and Vanilla. Mix these in well.
4. Add Baking soda, Salt, and Flour. Mix well.
5. Grease a 9x13 glass baking pan and spread your batter in the bottom of the pan. Here is a link to the one that I use and love.
6. Make the topping by adding the Sugar, Cinnamon, and Pecans in a small mixing bowl. Sprinkle it on top of the batter until it is all covered. I use all of the topping, but you might like less.
7. Bake at 350°F for 30-40 minutes or until an inserted toothpick comes out clean.
8. Serve and enjoy!
