Grandmas Fluffy Waffles

This is one of my family’s favorite recipes. It came from my Great Grandma. I have tried several waffle recipes, but I always come back to this one. They are so soft and fluffy, and they stay soft if you want to have them for leftovers.
Preparation:
1. Separate the Egg Whites from the Egg Yolks. Place the egg whites in a medium sized mixing bowl. Mix them on high for 3-4 minutes, or until they form stiff peaks. Set them aside till step 3.
2. In a separate large mixing bowl combine the Flour, Sugar, Salt, Baking Powder, Egg Yolks, Canola Oil, Evaporated Milk, and the Water. Mix it until it is smooth.
3. This step is the most important step. Fold, or stir in slowly, the egg whites into the waffle batter. You don’t want them completely mixed in. You want to still see small pieces of the egg white. See the picture to know what it should look like.
4. Cook your waffles. Everyone’s preference is different on how dark they should be. I typically put my waffle setting just above 3. Here is a link to the Waffle Maker I use.
5. Top them with syrup, whipped cream and strawberries, or whatever you like to have on your waffles!

Troubleshooting and Tips
Are Your Waffles Flat?
The waffle maker you use really does matter. I have made the same recipe with a different waffle maker and they didn’t turn out the same at all. I love the one I have because it is large and cooks them fast for a hungry family. Here is a link to the one I use. It seriously makes the best waffles!
Another reason the waffles may be flat is if you are mixing the egg whites into the rest of the ingredients too thoroughly. See the picture below!
