Bacon Potato Soup (Op 3 - Colors-Font)

This soup is a family favorite. Whenever I fix this soup, my kids always eat it and ask for more! That is always a win for me! I am also such a soup lover when the weather gets cold, so I am always on the lookout for good recipes! I have tried several potato soups, but this one is by far my favorite. It is one of those comfort foods that hits just right! I usually make a big batch so that we can have some the next day, and then I don’t have to cook again! And the kids have 2 meals that they love! Pair with salad, fresh bread, rolls, or muffins.
Preparation:
1. Cut 16 pieces of bacon into strips. Saute the bacon in a pan until it is half cooked. Then chop 1 large onion and saute the onion with the bacon. When the bacon is cooked and onion is transparent, then drain the grease.
2. Peel and cut thepotatoes into small cubes. Place the potatoes in a large cooking pot and add the water. Add the bacon and onion and boil the potatoes until they are tender.
3. Turn the burner on medium low and add the milk, sour cream, 2 cans cream of chicken soup, salt, a dash of pepper, and Parsley. Stir all these ingredients in until they are mixed well. You may want to add more salt according to taste.
Troubleshooting and Tips

I like to use Red or Yellow potatoes for this soup. But Russet Potatoes work great, too. If you use Red or Yellow Potatoes, you can leave the peals on them, and that saves time.

If you need a good soup pot, this is the one I like. You want a pot with a heavy bottom, otherwise it is very easy to scorch your soup.

Alterations

You can use Bacon Bites as an alteration to cooking your own bacon for this recipe. It saves time, but you will want to saute your onion in a tablespoon of Olive Oil if you decide to use the Bacon Bites.
